Ingredients :
Pumpkin Cake
4 eggs
2 cups sugar
1 cup vegetable oil
1 15 ounce can pumpkin puree
2 cups flour
3 teaspoons cinnamon
1 teaspoon pumpkin pie spice
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Cream Cheese Frosting
1 cup butter softened
1 8 ounce package cream cheese
2 teaspoons vanilla (we use our homemaid one)
3 cups powdered sugar
Instruction
1. Preheat oven to 350 degrees F.
2. Spray a half baking sheet with nonstick cooking spray.
3. In a mixing bowl, combine eggs, sugar, vegetable oil, and pumpkin puree until fully incorporated.
4. Slowly add the flour but continue stirring to avoid lumps. Mix until well combined.
5. Add the cinnamon, pumpkin pie spice, baking powder, baking soda and salt and mix
until well combined.
6. Pour the batter into prepared baking sheet and spread in an even layer.
7. Bake for 25-30 minutes, or until set and let cool completely.
8. For the frosting, cream together butter and cream cheese in a mixing bowl until fluffy.
9. Add vanilla and powdered sugar and mix until smooth.
10. Spread frosting over the cake and sprinkle cinnamon on top, if desired.

I have both of those recipes. Okay, I am 64, so I do have 17 cookbooks, a personal favorite notebook for recipes, and many recipe cards from others. I have never tried a chicken pot pie, but have wanted to do one, but I make so many "hotdishes" or casseroles as that is how I grew up in a family of 7. I am also going to make my own vanilla, since have seen how simple it is, just have not found any bottles like you have.
