I just realized that I promised to bring a delicious treat to a party we are attending in a few hours. Panic was setting in, and I found myself frantically flipping through the recipe book, desperately searching for something quick, easy, and sure to impress.
Then I remember that my sister-in-law makes the best: Sheet Pan Cookies! These cookies are not only simpler than your classic chocolate chip cookies but also highly customizable. The best part? You can whip them up in no time, leaving your guests thinking you spent hours in the kitchen.
Whether you prefer classic chocolate chip, want to experiment with your favorite mix-ins, or cater to dietary restrictions, this versatile recipe has got you covered.
So, let's embark on this delicious journey together and create a batch of sheet pan cookies that will save the day and elevate your party game. (note: This is for a half a sheet pan and a 8x8 pan. If you don't want that much just -.5 of the recipe)
Ingredients
6 cups all purpose flour
2 teaspoon baking soda
1/2 teaspoon table salt
2 cup (4 sticks) butter, melted and cooled slightly
3 cups packed brown sugar
1 1/2 cups white sugar
4 large eggs
2 tablespoon vanilla extract (we use our homemade vanilla you can buy from us)
3 cups chocolate chips (any kind you like, or a mix)
1/2 cup toffee bits (optional) for the top (DO NOT MIX IN)
Preheat oven to 350 degrees. Line a cookie sheet and a 8x8 inch baking pan with foil and lightly spray the bottom with cooking spray. (you can use a silicone mat or just butter if you want) Set aside.
Combine flour, baking soda, and salt in a bowl and whisk to combine. Set aside.
In a mixing bowl, thoroughly combine brown sugar, white sugar, and melted butter. Add eggs, one at a time, stirring between each addition, and vanilla. Add dry ingredients a little at a time until mixed. Stir in chocolate chips (save a few for the top if desired). Once dough is thoroughly mixed, press into the prepared baking pans (dont over fill pans)
Bake for about 25 minutes (all ovens are different, set timer for 20 minutes to start checking on them. They will bake for 20-30, 25 is perfection in my oven). Remove from oven when edges are golden brown and center appears set, but still soft. Cool completely to room temperature and then cut into squares.
We take the big pan to the party and leave the 8x8 at home for later. Enjoy
