Cozy butternut squash soup

This butternut squash soup has become our family's all-time favorite. Not only does it delight my husband, but it's also a big hit with our boys. We like to elevate the meal by pairing the soup with a refreshing and crisp salad, along with a loaf of freshly baked warm bread served with a generous dollop of creamy butter. With just 15 minutes of prep and a short 35-minute cook time, it's a comforting and wholesome dinner that the whole family eagerly anticipates.



Ingredients

8 tablespoons (1 stick) salted butter 1 garlic clove, minced 1 small white onion, cut into 1/4 -inch dice 2 1/2 pounds peeled butternut squash, cut into 1/2-inch chunks One 32-ounce box chicken broth 1 teaspoon ground nutmeg 1 teaspoon kosher salt, or as needed 3/4 teaspoon ground white pepper 1/2 to 1 cup heavy cream

  1. In a large soup pot or an instant pot, melt the butter over medium heat. Add the minced garlic, diced onion, and butternut squash. Sauté until the onion becomes translucent and the squash is tender, which should take about 10 minutes.

  2. Add the chicken broth, ground nutmeg, kosher salt, and ground white pepper to the pot. Increase the heat to medium-high and bring the mixture to a rolling boil. Once it's boiling, reduce the heat and let it simmer until the butternut squash is very tender, which should take approximately 25 minutes.

  3. Stir in heavy cream according to your preference. You can use between 1/2 to 1 cup of heavy cream, depending on how creamy you'd like the soup.

  4. To blend the soup, you have two options: a. Immersion blender method: Use an immersion blender to blend the soup directly in the pot until it reaches your desired consistency. Some prefer it smooth, while others like it a bit chunky. b. Blender method: If you don't have an immersion blender, let the soup cool slightly, and then use a stand blender to process it until smooth. Make sure not to fill the blender more than half full, and you may need to remove the steam vent in the blender's lid to avoid pressure buildup.

  5. After blending, ladle the butternut squash soup into bowls and serve it with some bread. Enjoy your homemade butternut squash soup!
